While looking for ways to use the leftover Tandoori chicken, he attempted to cook those dried pieces in a rich tomato-based curry, which rehydrated the meat and gave it a delicious flavour.

To make Indian-style Butter Chicken at home, begin by marinating the chicken with salt and letting it sit for 10 minutes. Next, remove any excess moisture from the chicken by squeezing it gently. In a bowl, combine edible oil with ginger garlic paste, lemon juice and spices, and mix well. Place the chicken in this marinade mixture and let it rest for 2 hours.

Once the chicken has marinated, you have the option to grill the chicken pieces, bake them in a preheated oven at 200°C, or pan-grill them.

While the chicken is being cooked, it's time to prepare the butter chicken curry. Cook chopped tomatoes, ginger, onion, garlic, and cashews in a cup of water for approximately 30 minutes. Once cooked, transfer the mixture to a blender and blend until smooth. Pass the mixture through a sieve to achieve a smooth gravy consistency.

In a separate pan, heat oil and butter together. Add caraway seeds and allow them to splutter. Then, add Kashmiri red chilli powder and cook for 30 seconds. Introduce the prepared sauce, tomato puree, salt to taste, and a touch of sugar. Cook the sauce until it thickens and develops a creamy texture.

Now, add the cooked chicken pieces, cream, pepper powder, and garam masala powder to the sauce. Cook for an additional 4-5 minutes, allowing the flavours to meld together. Finally, add crushed Kasuri Methi (dried fenugreek leaves) to enhance the aroma.

Once the cooking process is complete, remove the pan from heat. Serve the Chicken Butter Masala garnished with a drizzle of cream and a sprinkling of Kasuri Methi.
